You have probably started playing from scratch, which means you are still on normal difficulty. Therefore you can only see normal difficulty games. With progress of your character, you will be able to see nightmare and hell games aswell. Remember, major part of whole d2 gaming is done on hell difficulty.

You dont have to worry, on softcore there is daily average about 1k online players, so there are plenty of people you will be able to play with.

I suggest you to create a game with name Need rush or similar, im sure some1 will join it to help you to get to hell and give you some starting equipment aswell.
